These are the best healthy muffins I have every come across…even my husband liked them and he’s not a fan of my “healthy” version recipes…

Wheat Banana Muffins

  • 2 1/2 C 100% whole wheat flour
  • 1 C oats, ground up in the Vitamix
  • 1/2 - 1 tsp salt
  • 2 TBLS wheat germ
  • 2/3 C olive oil
  • 1 C honey
  • 4 eggs
  • 2 C mashed ripe bananas
  • 1/2 C hot water

Preparation & Directions

Preheat oven to 325.  Stir together dry ingredients.  Beat oil and honey together, add eggs and beat well.  Add bananas and beat to combine.  Add dry ingredients to wet, alternating with hot water; mix well after each addition.  Spoon batter into 24 greased/papered muffin cups.  Bake for 15 minutes or until muffins are golden brown.  Remove and let cool on oven rack. A slight variation would be to add nuts &/or raisins!

Next on my list of things to make, just have to wait for the bananas to ripen, but I know they are already good because I ate 5 of them while visiting you last smile
