Danika's Notes
This is a childhood favorite of mine…my grandma who was from Spain used to cook this all the time when we’d go and visit her. It’s delicious, super easy and inexpensive!
Ingredients
- 4 medium potaotes, peel
- (1/4 the potatoes and thinly slice each 1/4)
- 2 TBLS unsalted butter
- 1 TBLS vegetable oil
- small onion, thinly sliced
- 4 scallions (optional)
- 4 button mushrooms, chopped (optional)
- 10 slices canadian ham, cut in small cubes
- 12 eggs, lightly beaten
- 3/4 - 1 tsp salt
- 1/4-1/2 tsp pepper
Preparation & Directions
Heat oven to 400. Melt butter in oil and butter in an oven safe large skillet (preferably non-stick) and add all ingredients except eggs, salt and pepper. Saute until golden, about 10 minutes. Take off the heat and add salt & pepper. Pour eggs over potatoes, stir around and immediately place in oven and bake for 25-30 minutes. Let cool 20 minutes and the omelette should slide right out onto a flat surface. Once cool, cut into small squares for appetizers or cut like a pizza for a meal! Some tricks with preparing this…if you have a cuisenart, it works great for all the slicing and makes that part go real fast.
