This is a fabulous last minute dinner when you just don’t know what to cook. It is super flavorful, low fat and even kids love it!
- 4 boneless skinless chicken breasts
- 2 TBLS olive oil
- 5 cloves garlic, minced
- 2 TBLS fresh rosemary or 1 tsp dried, minced
- 1 TBLS Dijon mustard
- 1 TBLS fresh lemon juice
- 3/4 tsp salt
- 1/4 tsp pepper
Preparation & Directions
Rinse chicken, pat dry. Place in a ziplock bag. In a small bowl, mix all ingredients together and pour over chicken, turn to coat. Cover and marinate at room temperate, 30 minutes, turning occasionally. Barbeque over medium heat, about 15 minutes, turning every 5 minutes. Bast with left over marinade as it cooks. I tend to use this as a quick, last minute dinner…to make it even faster, I cut the chicken into tenderloins before marinading.
