Image of Pesto Sauce


  • 2 cups fresh basil
  • 1/4 cup toasted pine nuts
  • 1 clove garlic
  • 3/4 cup olive oil
  • 1 cup parmesan cheese, grated
  • salt and pepper to taste

Preparation & Directions

Toast pine nuts in oven for 10 minutes on 325.  Start your water boiling for the noodles.
In a food processor, blend basil, pine nuts and garlic. Slowly add olive oil will processing. Then add the parmesan cheese and blend.  Add salt and pepper and blend.
Serve over al dente noodles of choice.
Some variations:
Use Quinoa noodles for added protein or what I do is use regular, whole wheat or brown rice noodles and add 2 cups cooked chicken and 1/2 cup sundried tomatoes.
