Here’s a great banana bread that your kids will love and is even loved by adults…it’s not quite as sweet as the typical bread. Try adding a few chocolate chips or raisins to it…it really is perfect!
Ingredients
- 1 1/2 C mashed banana
- 1/4 C oil
- 1/2 C honey
- 1 tsp. vanilla
- 2 eggs, beaten
- 2 C whole wheat flour
- 1/2 C wheat germ
- 1 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt (optional)
- 1/4 C flax meal (optional)
- 1/2 C walnuts (optional)
Preparation & Directions
Mix together banana, oil, honey, vanilla and eggs. In a separate bowl, combine all dry ingredients. Add the dry mixture to the wet mixture. Fold in walnuts. Oil pan and bake 1 hour (for single large loaf) or 30 minutes (3 mini loaves) at 350. Folding in chocolate chips at the end of the mixing is also a great variation, just makes it a bit sweeter (and not as healthy) but soooo good! If you want to skip the wheat germ or just don’t have it in your kitchen, just make sure to add an extra 1/2 cup of flour to make up for it.
