Here’s my favorite split pea soup recipe…. easy and delicious!
Ingredients
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 3 celery stalks, chopped
- 1 clove garlic, crushed
- 6 small red potatoes, chopped
- 1 C split peas
- 1/2 tsp salt
- 1/2 tsp dried marjoram
- 1/2 tsp dried thyme
- pepper to taste
- 4 C chicken or vegetable broth
- 1 slice black forest ham, cubbed
Preparation & Directions
Chop all vegetables the same size (they will cook evenly). Saute the onions with a little olive oil until tender. Add carrots, celery and garlic and saute for about 5-6 additional minutes. Add broth, peas, potatoes and seasoning. Bring to a boil. Reduce heat and simmer 1 hour. Add cubed ham and simmer another 30 minutes.
* I buy 1 slice of ham at the deli counter and I ask them to cut it about 1/4-1/2 inch thick. The I cut that one slice into little cubes to match the size of the vegetables.
