Quick, easy and delicious added along side your choice of eggs!  We actually made these on a whim with scrambled eggs tonight when I realized I didn’t have anything for dinner!  Added a fruit salad…and yum!

Breakfast Potatoes

  • drizzle of olive or grapeseed oil
  • 1-2 tsp butter
  • 2 potatoes, diced into 1/2-1 inch cubes
  • 1/2 white onion, diced
  • 1/4-1/2 tsp finely chopped fresh rosemary
  • 1 clove garlic, minced
  • salt and pepper to taste

Preparation & Directions

Heat up oil and butter and add potatoes and onion.  Saute on med. heat.  After about 5 minutes, add rosemary, garlic, salt and pepper.  Continue to saute on med. to low med. heat for additional 10 minutes, stirring every few minutes, until browned and softened to preference.
